Khasta kachori


Ingredients
Chana daal 100g
Urad daal 100g
Refined flour(maida) 500g
Oil 1/2litre
Heeng
salt
corriander pwd
chilli pwd
amchoor pwd
garam masala pwd
baking soda
Fennel seed pwd
Method
Roughly grind the overnight soaked daal together.In a pan take 2 tbl spoon of oil &heat it.Put1/4teaspoon of heeng & add ground daal in it.Now add the spices in it.Saute it nicely till it becomes almost dry.


Now make a dough of maida,for it add 150 ml of oil and half teaspoon salt in maida .Use luke warm water and make a tough dough.Mix 1/4tsp asafoetida (hing) and 1/2tsp baking soda in 1/2cup of water. Divide the dough into 20-25 small portions.
Take one portion in your palm press it with otherhand.Apply soda and asafoetida mixture on the it and fill small quantity of daal mixture .Roll it into ball and press it slightly again using both the hands

For frying     
Take the remaining oil in deep pan. Heat the oil on low flame.Deep fry the khastas on very low flame till it becomes golden brown. Don't loose your patience as frying will take at least 15-20 minutes.

Serve hot with fried aloo,curd and tamarind chutney
