Lamb (mutton)Biryani

INGREDIENTS:-
Mutton        500g
Par boiled basmati rice     300g
Green cardmom  6-8
Black cardmom 4
Bay leaves 6
Black peppercorns 15 
Cloves 4
Cinnamon  1inch
Nutmeg  powder a pinch
Salt to taste 
Corriander powder 1 tsp 
Red chilly powder 1/2tsp
Garam masala powder 1/2tsp
Dry mango powder 1/2tsp
Curd    100g
Chopped onion  4-5
Ginger garlic paste    2tsp
Green chilly     4
Oil      4table spoon
Orange colour
METHOD:-
Wash the mutton properly.Heat oil in a pan and fry half of the onions and keep aside.Pour the left over oil in a pressure pan .Add whole spices in it. Let it crackle.Add chopped onion stir fry it till transluscent.Add ginger garlic paste,green chilly,curd in it .Now add mutton to it.Keep on stirring it.Add salt and other powdered spices and pressure cook it for 10 min.
Soak rice in water for 15 min. Boil 1 litre  water in a pan .Add  bay leaves ,green cardamom and 2 tsp salt.Now drain the rice and cool it in boiling water till half done.Drain the water and let the rice cool down.
Take a pan with heavy base.Put some oil in it .Set the layers of cooked rice and cooked mutton(with gravy) one by one.After every layer sprinkle some fried onions and garam masala powder.Make it clear that top most layer must be of rice.Now take a pinch of edible orange colour .Mix it in 1/4 cup of water and pour it on the top layer in a spiral manner.Cover the pan with a lid properly and seal it with dough.Put the pan on high flame for 5 min and 10 min on low flame.Remove it from the stove. Open the lid after 10min and mix it well with light hands.
Serve it hot with onion rings and mint raita.
