COCONUT RICE

INGREDIENTS:- Rice                        200g Fresh Coconut     250g Oil                          2tbsp Salt  To Taste Mustard  Seeds    2tsp Chana Dal             1/2tsp Pepper Powder    1/4tsp Curry Leaves        10-15 METHOD: Boil rice in half litre of water .Cook it till done.Drain the excess water and add 2tsp of oil Leave it  and let it get cool. In a frying pan , take the remaining oil and heat it.Put mustard seeds ,curry leaves and chana dal into the oil. When it stops crackling put grated coconut into it and fry on low flame for 5 minutes.Switch off the gas stove .Add cooked rice , salt and pepper.Mix it well Coconut rice is ready to serve

Gulab Jamun

Ingredients:- Mawa                      500g Sugar                       4 cups Refined flour         100g Desi ghee (oil) for frying Green cardamom     3-4 Method:- Mix mawa and refined flour together nicely. For mixing use your palm to make the mixture smooth.Knead it till it turns into a smooth dough. Now make small ballls of it using your palmsmPour Desi ghee in a deep frying pan and start frying the balls on a low flame till the balls turn golden brown On another stove prepare sugar syrup.For the sugar syrup take a big pan ,take sugar and 2cups of water in it.Let it boil till the sugar melts completely. Add cardamom and let it boil for 2 minutes more. Add the fried balls into luke warm sugar syrup. Make it sure that balls of mawa must go directly into the sugar syrup. Leave it 10 minutes and gulab jamun are ready to serve.

KESARIYA RAWA(SUJI) HALWA

INGREDIENTS Rawa or suji        1cup Sugar                    1cup Green cardamom  4-5 Saffaronstrands     6-8 Deshi ghee(clarified butter)  2tbsp Chopped Almonds        10-12 Raisins                 25 g Water METHOD Take ghee in frying pan and saute rawa in it on a low flame till it becomes very light pink and starts giving aroma.Remove the pan from stove.Take another pan with 2 cups of water in it . Add sugar cardamom and saffaron strands in it.Put the pan on stove and let it boil till the sugar completely dissolves .Now add tried rawa in it and cover the pan with a tight lid.Switch off the stove.After 10 min open the lid and mix it well.Garnish with almonds ,raisins and saffaron. Dahi Chicken (starter)

INGREDIENTS :- Chicken 500g Curd        300g Green chilly    4-6 Salt to taste Black pepper powder 1/2tsp Kasoori methi 1 tsp Ginger garlic paste 1tsp METHOD:- Mix all the ingredients in a pan. Put chicken in it. Keep it in refrigerator for 30 min. After 30min put it on high flame till it becomes dry.Sprinkle kasuri methi and mix it well.Switch off the gas stove Serve it hot with sliced lemon and onion rings

DAHI KEBAB

Ingredients :- Curd  500g Roasted gram flour 3 teaspoon Finely chopped onion Chopped green chillies Few corriander leaves Salt to taste blackpepper powder  Oil to fry  Method:- Take a muslin cloth and hang the curd in it for at least  two hours so that you can get hung curd. Mix all the ingredients (except oil) in it. Give the shape of kebabs and shallow fry them using oil in a flat pan till they become golden brown. Kebabs are ready .Serve hot with lemon slices,onion rings and green chutney.

Banana Wafers

Ingredients :- Banana (green)            6 Turmeric powder       1/2 teaspoon Salt                                 1/2 teaspoon Oil to fry Method:- Peel bananas and soak in water for 15 minutes.Drain the water and wipe banana with muslin cloth.Cut it in to thin chips. Mix turmeric and salt in one cup of water. Heat oil and deep fry the chips until water content is evaporated.Now add 1table spoon mixture of water salt and turmeric in the pan in which chips are being fried.Saute it till once again water contents are evaporated completely.Take the wafers out of the pan and spread it on a tissue paper Your golden yellow banana wafers are ready.

RAS MALAI

Ingredients:- 2 litre milk 1 lemon 1.5 cup sugar 5-6 strands of saffron Yellow food colour For garnishing Pistachio  Green cardamom Recipe:- Boil 1.5 l milk and cuddle it using lemon juice.Strain it to get the solid milk content that is cottage cheese.Wash it nicely to remove the sourness. Mash it nicely using finger tips for 20 min. Make it sure that cheese should look like a smooth dough.Make 20-25 small ballls using dough.In a broad pan pour sugar and 4 cups of water.Bring it to boil.Cook the balls in it for 20 min on high flame.Let it cool on room temperature Now boil the remaining milk . Add 1 spoon sugar,saffron and a pinch of yellow colour . Let it boil for 10 minutes. Squeeze the balls slightly and place it in the thickened milk.Garnish it with Pistachio and green cardamom. 

Khasta kachori

Ingredients Chana daal 100g Urad daal 100g Refined flour(maida) 500g Oil 1/2litre Heeng salt corriander pwd chilli pwd amchoor pwd garam masala pwd baking soda Fennel seed pwd Method Roughly grind the overnight soaked daal together.In a pan take 2 tbl spoon of oil &heat it.Put1/4teaspoon of heeng & add ground daal in it.Now add the spices in it.Saute it nicely till it becomes almost dry.

Rasogulla

Ingredients :- 1litre milk 3 cup sugar 1 lemon 1/2 tsp Baking soda Recipe:- Boil the milk. Let it cool for 5 minutes. Add lemon juice in it and keep stirring the milk till the milk starts curdling. Strain the water using muslin cloth . Now , wash the curdled with water to remove the sour taste. Squeeze it nicely till the the last drop of water.Knead it using finger tips till it becomes smooth. Let it rest for five minutes. Mix baking powder and knead it again for 10 minutes. Make smooth balls of it In a pan make sugar syrup using 3 cups of sugar and 8 cups of water. Add half table spoon of milk to remove the residue of sugar. Add the balls into sugar syrup and let it boil for 15 minutes on medium flame. You can add small quantity of water if syrup gets thickened. Remove from the stove and leave it for one hour. Now RASOGULLAS are ready
